I think raw salmon tastes much better than grilled or fried..I know Its weird.

Today I was eating some salmon fish. I have heard it is the best fish for health. However, I noticed that in addition to the light pink color fish there was also some white color fat inside the fish. I want to ask if this fat is good for health or should we remove it and only eat the pink color fish?
